This week's Resolution Recipe: Shakshoula with mint yoghurt

1 fl oz yoghurt
pinch finely sliced fresh mint
olive oil, for cooking
1/4 onion, finely chopped
2 cloves garlic, finely chopped (Ha! I used... more.)
1/2 bay leaf
1 red chilli, finely chopped
salt and pepper
1/2 tsp cumin seeds, toasted
1/2 tsp smoked paprika
pinch cayenne pepper
1/2 red bell pepper, deseeded and sliced 1/4" thick
7 oz chopped tomatoes
3.5 fl oz stock
pinch coriander
pinch finely chopped fresh parsley
2 eggses

Mix the yoghurt and sliced mint together and set aside.
Heat some olive oil in a skillet over medium heat and saute the onion, garlic, bay leaf, and chilli for 3 minutes. Season with salt and pepper. Add the paprika and cayenne and cook for a further 3 minutes. Add the red bell pepper slices and cook for 5 minutes, until they begin to soften.

Pour in the chopped tomatoes and stock, then lower the heat and simmer for 10 minutes. Stir in the coriander and parsley, then make 2 little wells in the surface of the sauce and crack an egg into each. Simmer over a very low heat for 10 minutes, or until the eggses are set but still soft.

Season the eggses with salt and pepper and serve with dollops of the mint yoghurt to garnish.

What worked: It was reasonably tasty and quick to prepare.

What didn't: It wasn't inspiring.

Will I make it again? I might, but it's not on the short list.
