Better than expected
This week's Resolution Recipe: Warm Spinach Salad with Scallops and Oranges.
2 large oranges (I used blood oranges, because they're in season, they're pretty, they're tart, and why not?)
1 Tbsp olive oil
1 Tbsp minced shallot
1 1/2 tsp balsamic vineagar
pinch salt and pepper
1/6 cup sunflower seeds or pine nuts
1/2 lb scallops, cut in half crosswise
3 oz baby spinach
Zest and squeeze one orange; set aside. Peel the other and halve the segments.
Heat the oil in a large skillet over medium heat. Add the shallots and saute until softened, about 1 minute. Remove from the heat; stir in the vinegar and orange juice/zest. Add the salt and pepper and whisk well.
Heat the skillet back up (wipe if needed). Add the nuts and stir until fragrant and toasted, about 2 minutes. Turn out into a salad bowl. Add some more oil and cook the scallops over medium-high heat until seared on both sides, about 3 minutes. Combine everything in the bowl, toss, and serve warm.
What worked: This was far better than I expected. We yummed it right up.
What didn't: I was pretty happy with it.
Will I make it again? Undoubtedly.
