All together now, you know the mantra!

Poppyseed salad dressing
"I never promised that recipes would be complex. Just that they'd be 'new'."

1/3 cup sour cream or yogurt (I used goat milk yogurt)
3 Tbsp honey (!)
1 shallot, minced
1 Tbsp Dijon mustard
2 Tbsp white wine vinegar
2 tsp poppyseeds

Place all in a blender and blend until smooth.

What worked: It was all right. Different than our usual oil-and-vinegar, anyway.

What didn't: Too sweet. The honey and poppyseed combination was cloying to my palate.

Will I make it again? Doubtful.

Do you think it would work if you just put less honey in? What about an artificial sweetener?

If I were to try it again, I'd put substantially less honey in. I don't know if I'd like it any better, though.
