Not feeling guilty

[livejournal.com profile] goldenstag, perhaps mistakenly, offered me the choice of showing up to rehearsal today. I have a small part and I'm not really needed today. So, I jumped at the chance to stay home and relax with the wife today. It's been a while since I've had the whole weekend at home, and I prolly won't for the rest of the year. So this is nice.

This recipe is [livejournal.com profile] callistotoni's and [livejournal.com profile] mad_duchess's fault... I have the book they were talking about.
Buttermilk Waffles

1 3/4 cups flour
4 tsp baking powder
1/2 tsp salt
4 large eggses
2 cups buttermilk
8 ounces (!) butter, melted and cooled

Whisk the flour, baking powder, and salt until blended. In a small bowl, beat the eggs and buttermilk until well mixed. Add the flour mixture and mix with a fork to moisten the flour. Stir in the butter. Overmixing makes tough waffles, so don't.

Pour batter onto the center of a hot waffle iron and cook.

What worked: Yummy. We didn't add any butter, because, well, there's enough already in there. Just a small splash of maple syrup (grade B, [livejournal.com profile] cvirtue, I promise!) and fresh strawberries from yesterday's farmer's market.

What didn't: I could have halved the butter and it still would have been plenty.

Will I make it again? Maybe. I'd definitely cut the butter, though. TJ only sells quarts of buttermilk, which means that anytime I do something like this I have to figure out how to use the remaining 2 cups.

This gets me caught up through last week. I'm cooking two more Resolution Recipes today, for this week and also next week when I'm in New York on business. Airport to hotel and probably back to airport, although I'm going to try to hit a museum. I keep trying to make it to the Cloisters and not getting there...

So, are you going to keep doing these after the new year, or was it a one year only kind of resolution?

It's been a bit over a year since I started doing these -- hence the name of Non Year's Resolution. I still have lots of cookbooks, so I'm still sticking with it.

No worries, things were interesting, but not in a "Chinese" sense of the word (whew!). Still rough, but that's to be expected ...
