This week's Resolution Recipe: Cauliflower Soup.

1 head cauliflower
2 small onions, sliced
no garlic (Ha! I used... more.)
1 stick unsalted butter, cubed (I used about 2/3 stick)
1 bay leaf
salt and pepper
4 cups water (I used ~1 cup stock and 2 cups water)
olive oil, for drizzling

Chop cauliflower into 1" pieces. Melt half the butter in a medium heavy pot over medium heat. Stir in onions and garlic and sweat about 5 minutes. Add cauliflower and bay leaf, and season with salt and pepper. Saute 2-3 minutes.

Pour in enough water to just cover cauliflower. Increase heat to medium-high and simmer about 20 minutes, until cauliflower is tender. Discard bay leaf. Puree everything in pot, adding remaining butter one piece at a time. Season as desired. Ladle into 4 bowls and garnish with a drizzle of olive oil.

What worked: It was better than I expected, even with less butter than it calls for. I threw in a bit of dried basil and some fish sauce for extra umami. Throwing on a bit of chopped green onion was also nice.

What didn't: I didn't get it completely smooth with the immersion blender.

Will I make it again? Possibly.
