Beets In The New Style

6 medium beets, 7.5" circumference
1 cup cold water
Rub and wash the beets under cold running water, leaving skins on. Trim off and discard the roots. Pour 1 cup water into Instant Pot then place beets on a trivet. Close and cook at high pressure for 24-28 minutes; 24 will be firm and a little crunchy, 28 will be soft with some chew. Quick release the lid, drain, peel, and serve as desired.
What worked: An easy way to cook beets.
What didn't: The original has a time guide by circumference, but the beets were much softer than this would indicate.
Will I make it again? Probably, as this is a reasonable substitute for boiling. We like beets.
