This week's Resolution Recipe came with the new waffle maker: Good Night Waffles.
Please tell me somebody appreciates the bilingual pun...
1/2 cup lukewarm water
1 Tbsp sugar
2 1/4 tsp dry yeast (1 packet)
2 cups whole milk, warmed
1/2 cup unsalted butter, melted and cooled somewhat
1 tsp salt
2 cups white flour
2 large eggses, lightly beaten
2 tsp vanilla
1/4 tsp baking soda
The night before, or at least 8 hours before baking, combine the warm water, sugar, and yeast. Let stand 10 minutes, until foamy. Stir in the milk, butter, and salt. Beat in the flour until smooth. Wrap tightly with plastic wrap and let stand on the counter overnight, or for 8 hours. Do not refrigerate.
Heat waffle iron. Stir the eggses, vanilla, and baking soda into the batter. Makes ~six waffles.
What worked: These made excellent waffles. Crispy and rich (which makes sense, given the butter content).
What didn't: We're still adjusting to the new waffle maker. I overfilled the first set and didn't close it completely on the second; some sides were underdone.
Will I make it again? Not regularly, but when we want waffles this is a good option.
