This week's Resolution Recipe: Breakfast Trifle.
The quantities are a bit weird because I cut this down from 6 servings to 2.

2/3 c Greek yogurt (I used ricotta, because we had it left over)
2/9 c chia seeds (37 grams)
1/9 c honey, or to taste
2/3 tsp cinnamon
7/12 c frozen berries
4 tsp powdered sugar
grated zest of 1 small orange
2 slices brioche, about 2 oz, torn (I used challah - yes, it's an imperfect substitute; brioche is eggier, richer, and lighter. I like it better, too. But the wife really likes challah.)
1/2 c granola (I used our house blend of granola and muesli)
whipped cream for serving

Mix chia, yogurt, honey, and cinnamon. Add more honey to taste if desired. Combine the fruit, powdered sugar, and orange zest. Let fruit mixture defrost for 30 minutes. Drain off the excess juice and reserve.

Place the fruit in two transparent serving dishes. Mix the brioche and granola, and spread it on top of the fruit. Drizzle the reserved juice over the top, then spoon the chia/yogurt mixture as the top layer. Place in the fridge for at least 30 minutes, or overnight. Top with whipped cream just before serving.

What worked: This was better than I honestly expected, and easy. Although it's not low-calorie, it felt more indulgent than it really is. The ricotta seemed to work okay although Greek yogurt would also add more tang and more liquid.

What didn't: There was hardly any juice from the thawing fruit which made the challah layer a bit dry. I'd up the fruit to 1 cup and split two layers to sandwich the brioche. I might lower the chia seed content when using ricotta since it's already thicker than the recipe intends.

You're supposed to use glass trifle dishes so you can see the distinct layers. We don't have any, so I just used ceramic cereal bowls which are far less impressive.

Will I make it again? I don't think it will be a regular thing - especially since brioche or challah is not my preferred type of bread and I don't regularly buy them. But I might make it on occasion.

I might try this with actual yogurt, which might be one of the reasons for the challah being dry.
While I am fairly pleased with the entry title, it did earworm me something wicked.
