1 kg of Gravensteins purchased from the costermonger, now simmering on the stove to turn into apple butter. I do not have that many jars of apple butter in storage (the highest numbers by far on my jam spreadsheet are marmalade and plum) - plus I want the breed to continue.

I don’t know enough about apple breeds and their status— I didn’t realize they would be threatened. Is it changing palates? or climate? or something else all together?

They are 'out of fashion'. In part because they do not have a Heavy crop Every year.
Fine for home growing, more difficult to presell to chain stores. Folks have been ripping them out, planting the latest trendy apples. (That bear a "predictable" amount every year. *In Theory*)
They have many fans among home apple growers, so as long as we have One tree, and remember how to graft, they probably will not completely disappear. (Though hundreds of kinds have...)
