Salmon Chanted Evening
Dec. 26th, 2021 02:08 pmWell, breakfast actually. This week's Resolution Recipe: Smoked Salmon Hash.
1 large potato, cooked
2 spring onions, sliced
1/2 oz chives, chopped
no garlic (Ha! I used... more.)
2 Tbsp sour cream
4 tsp horseradish
2 eggses
3 1/2 oz smoked salmon, cut into 3/4" slices
Cut the potatoes into 3/4" cubes, or thereabouts. Melt half the butter in a frying pan on medium heat and saute the potatoes for 6-8 minutes, until they start to brown. Add the spring onions and continue to saute for 3-4 minutes. In the meantime, mix together the chives, sour cream, and horseradish.
Take the pan off the heat, add the smoked salmon, and stir to warm through, taking care to not let the residual heat cook the salmon too much. Season with salt and pepper. Be careful not to add too much salt, as the salmon can be quite salty.
Fry or poach the eggses. Divide the eggses between 2 plates, top with the hash, and season with salt and pepper. Serve with the horseradish cream on the side.
What worked: It was fine.
What didn't: It wasn't as good as the ingredients would warrant, especially the really nice smoked salmon we got from Cap'n Mike.
Will I make it again? Maybe, but I would use cheaper smoked salmon.
