This week's Resolution Recipe: Old-Fashioned Banana Pudding.
Do you know how many recipes I had to wade through to find one that didn't involve instant vanilla pudding, sliced bananas, Cool Whip, Nilla Wafers, or all of those things? Sheesh.

3 eggses, beaten
1 cup sugar
dash salt
2 Tbsp cornstarch
2 cups milk (I used half-and-half)
1 tsp vanilla
3-4 ripe bananas, mashed

Whisk sugar and eggses together. Add salt, cornstarch, and milk. Bring to a boil over medium-high heat, stirring constantly; cook until thickened. Remove from heat; add vanilla and bananas and mix well.

What worked: It was basically what I was looking for.

What didn't: A bit too sweet. It made six servings, so the next couple we'll try topping with roasted walnuts to add some bitter.

Will I make it again? I wouldn't mind, but probably not.

What’s wrong with Nilla Wafers? Also, I read and I appreciate how hard you worked to find this recipe. Bravo!

I LOVE dipping them in nutella and crunching on them. I like their crunch... they probably lose that when they become part of banana bread.

I wonder if they could make crust like graham crackers? thoughts?
