This weekend I am making a couple Xmas puddings adapted from Mary Berry's recipe. She makes them the week before, which is what I did last year, but they should be even better aged for a couple months. (I am making two so that we have one to take to my dad's for Xmas Eve, and one for a homeowners' meeting around then.) The adaptations are:

- substituting dried apricots and cherries for the sultanas and raisins, as the wife does not care for them;
- using apricot brandy instead of rum or whiskey;
- steaming in the CultPot, which reduces the time from several hours to one.
