...so, the wife and I are back. It was an excellent vacation, just what we were looking for. I'll post more details tomorrow, probably. But I did actually manage to make a Resolution Recipe for dinner tonight. Hah!
I mentioned that I need to work on my dinner party repertoire. This is one of the dishes that might qualify.
(Crustless Tuna Quiche, of sorts)
6 oz canned tuna in water, drained
3 T tomato paste
5 T creme fraiche
3 large eggses
4 oz grated Gruyere cheese (i.e. Swiss to you folks who don't know Fronch cheese types)
pinch salt and white pepper
2 T chopped flat leaf parsley
1/4 cup minced onion
Heat oven to 325. Spray 8 wells of a muffin tin. In a medium bowl, break up the tuna with a fork, smashing it to a rough paste. Add the rest and mix well. The batter should be relatively smooth. Spoon into the 8 muffin tin wells, bake for 20-30 minutes, until set and golden around the edges.
What worked: Pretty easy. Tasty. I placed two on each plate, surrounded by artfully-decorated salad. Hey, I said I'm trying to work on the dinner party thang.
What didn't: The original recipe was developed by Demarle, who is the maker of SilpatTM, or silicone pans. They might come out more easily in those. Some of mine deformed a bit. They were supposed to take 20 minutes, but hadn't yet set so it ended up being 30 minutes. I also think that a few herbs would zing up the taste somewhat - maybe thyme or oregano. Suggestions?
Will I make this again? Yeah, I think so. I could make up huge batches and store in the freezer ahead of time, then thaw out in the toaster oven for the dinner party. Maybe with a chive antenna in each one...
