Banana Chocolate Chip Muffins

1 stick butter
3/4 cup sugar
1 egg
1/2 tsp nutmeg
1/2 tsp allspice
2 overripe bananas, smushed
1/3 cup milk
1 cup whole wheat flour
1 cup white flour
1.5 tsp baking powder
1/2 tsp baking soda
3/4 cup miniature chocolate chips
1 cup chopped walnuts

Heat oven to 350. Cream butter and sugar until smooth. Beat in egg, spices, banana, and milk. Whisk together dry ingredients, then gently stir into batter. Spoon into 12 greased muffin cups. Bake for 20-25 minutes, until a toothpick inserted into the center comes out clean. Remove from the oven, let cool 10 minutes, then unmold.

What worked: um, they were okay.

What didn't: too sweet. They didn't "muff" properly - that is, they didn't rise to a nice stereotypical muffin shape.

Will I make this again? Probably not. I prefer apple-oatmeal muffins, or cranberry-orange, or... the list of other muffins that I like better (and that work) is plenty long.

By any chance, do you have any recipes for easy-to-cart tourney food that doesn't use wheat & white flower? Maybe with flax meal or oatmeal or something similar? Or is this like a sacrilegious question? :->

When you're a crappy cook and you're giving up most OTC bread products, it does make it kinda hard to plan for an event.
