Pickled, roasted, whatever. I even like the scary shredded beets at salad bars that turn your hard-boiled eggs purple.
Now that we're going to the Ferry Plaza farmer's market regularly, we've been eating lots more beets – they have interesting heirloom varieties.
But the way the body processes them: that's disturbing.
