When you are pre-heating the oven, please remember to take out the rising sourdough sponge.
While the sponge smells nice as it cooks in the heavy ceramic bread bowl, it isn't really edible when baked until it's gone through several more kneading and rising cycles.
Please, don't be an idiot.
