Because I am insane, I am planning to make Eggses Benedict Saturday morning of Coronet.
First, I will make the sourdough English muffins. Then, I will cook the house-cured pancetta. bonacorsi will poach eggs while I make hollandaise. It will be good.

Gods help me, I had an idea last night.
I could churn butter onsite Friday for the hollandaise.

This way lies madness. Yet... it is awfully appealing...
