After having thoroughly cleaned and re-cleaned the crock the cleaners oh-so-helpfully cleaned out - I wanted to make sure any trace of soap I could get out was out - I put in some flour and water and dry yeast. And let it sit for a few days burbling, just to check. It burbled. Then I dumped it, because that's not sourdough.

I've had some flour and water in there for several days now. It is bubbling lightly and smells nicely sour. I'm not sure if I'll keep it, since other people have mentioned giving me some of their starter; but it is a reassuring thing.
