I gave up waiting for quinces to ripen after four weeks (and throwing half out when they started to go bad). They still don't have any rose-water smell. I'm boiling these and will mash them up for oatmeal fodder, because that's better than simply throwing them away.

I don't know why these never ripened. Usually two weeks is more than sufficient. There should be another month of quinces showing at the market; if any of those smell ripe-ish, I'll go ahead with plans for cotignac or quince jelly. Otherwise I'm declaring it a loss for this year.
