Streusel
1/2 cup flour
6 Tbsp brown sugar, packed
pinch salt
1/2 tsp cinnamon
1/2 cup chopped walnuts
3 Tbsp butter
Muffins
2 cups flour
1 Tbsp baking powder
1/2 tsp salt
1 cup chopped apples
2 large eggses
1/3 cup honey
1/4 cup vegetable oil
1/3 cup milk
1/4 cup brandy (or substitute milk)
Mix together flour, brown sugar, salt, and cinnamon. Cut in butter and mix in walnuts; the mixture should be crumbly. Set aside.
In a large bowl, combine flour, baking powder, and salt, then stir in the apples. In another bowl beat the eggses, oil, honey, milk, and brandy. Gently stir wet into dry until just blended. Spoon into a greased muffin pan. Sprinkle each with streusel topping, dividing evenly. Bake 25 minutes at 375, until golden brown. Remove from oven and let sit for 5 minutes before removing.
What worked: These were yummy. Much lighter in texture than my normal apple muffins, which I usually make with oatmeal and walnuts and... they tend to be rather, er, hearty.
What didn't: The streusel topping made it difficult to take out of the pan -- it scattered when the muffins were removed.
Will I make this again? Yeah, probably. It was a nice change.
