Still, got one done this week.

2 Tbsp olive oil
1 lb chard, chopped
2+ cloves garlic, minced
1 onion, diced (I used leeks)
3 large tomatoes, diced
chopped ham (I used proscuitto)
parmesan cheese
nutmeg, salt & pepper
Parboil the chard for 1-2 minutes and drain. Saute the onion and garlic in the oil until golden-ish. Stir in the tomatoes, ham, and chard and heat until bubbly. Add spices and sprinkle in cheese. Serve hot.
What worked: A decent way to use up the chard and tomatoes from this week's box, as well as the leeks from a week ago. Not difficult.
What didn't: Not terribly exciting, either.
Will I make it again? Meh. It would be okay as a side dish, I suppose.
A side note: Applebee's is substituting arugula for spinach in their recipes. Aruuuuugula.
