Last week's Resolution Recipe: Green Beans with Walnuts and Mortadella.
I planned to make this on Valentine's Day, but the whole us being sick with the flu thing put the kibosh on it. So I made it for the weekly Homeowners' Meeting instead.

1 1/4 lb green beans, trimmed
1 tsp olive oil
1 oz mortadella, diced (1/3 cup)
salt and pepper
1/2 cup walnut pieces, lightly toasted (350 for 5 minutes worked)

Steam green beans just until squeaky, rinsing them under cold water to stop the cooking process. Pat dry. Pour oil into a pan and set over moderately high heat. Stir in the mortadella and saute for a minute or two to warm and release its flavor, without browning. Turn in the beans, seasoning lightly with salt and pepper; toss and turn gently together for several minutes. When well heated through, toss in the walnuts; toss and turn all so everything is heated, and serve.

What worked: It was okay. Mortadella is lovely when sauteed with walnuts.

What didn't: It really was unexceptional. I'd rather eat the mortadella we get from our meat CSA with a poached egg or something.

Will I make it again? Probably not. I like green beans, but I'll just steam them on their own.
