This week's Resolution Recipe, which I made for Valentine's Day dessert: Chocolate Cream Pie.
1 9" pie crust, fully baked (1/2 stick butter, 3/4 cup flour, pinch salt, 3 T cold water - it's not difficult.)
8 oz chocolate, chopped (I used 7 oz 71% bittersweet, which made this both less sweet and more chocolaty.)
2 Tbsp unsalted butter
1 tsp vanilla (I used 2 tsp. Always double the vanilla.)
2/3 cup sugar
3 Tbsp cornstarch
2 Tbsp unsweetened cocoa powder (I used 1 T each cocoa powder and black cocoa powder, just 'cause.)
1/8 tsp salt
1 cup cream, divided
3 large egg yolks
2 cups milk
Topping:
1 cup cream (I infused it with cocoa nibs)
1/4 cup powdered sugar (I used 2 Tbsp)
1/2 tsp vanilla (I doubled it, of course)
Place the chopped chocolate, butter, and vanilla in a bowl and set aside. In a medium saucepan, whisk together the sugar, cornstarch, cocoa, and salt. Add 1/4 cup cream, whisking until smooth. Repeat with another 1/4 cup. Whisk in the egg yolks. Place over medium heat, and gradually whisk in the remaining 1/2 cup cream and the milk.
Bring to a boil, stirring constantly. Boil for 1 minute. Remove from heat and pour over the reserved chocolate and butter, stirring until the chocolate melts and the mixture is smooth. Place plastic wrap on the surface to prevent a skin from forming and chill thoroughly.
Whip the cream until it starts to thicken. Add the sugar and vanilla and whip until desired stiffness. (Heh.) Spoon the cooled filling into the crust and spoon or pipe the whipped cream on top. Chill until ready to serve.
What worked: It's basically a chocolate cornstarch pudding in a crust with whipped vanilla cream on top. Yum.
What didn't: It didn't serve well - the pudding and cream blorped when I took slices out of the pan. Baking these as individual pies might be better. Also, I should have remembered to use the pastry bag to pipe on the cream, as it would have looked nicer.
Will I make it again? I might. It wasn't that much work, despite how the recipe reads.
