Ooh, Snap!

This week's Resolution Recipe: Snap Peas with Ham and Mint.

1/2 lb snap peas
1 tsp butter (I used rendered house-cured lard)
1/4 cup smoked ham, in 1/4" dice
(I added 1 stalk green garlic, sliced)
1 Tbsp chopped fresh mint leaves
salt & pepper

Bring 3-4 cups water to a boil. Add 1 tsp salt & throw in snap peas. Cook for about 2 minutes, until tender. Drain, shock in some ice water, drain again, and pat dry.

Melt the butter over medium heat in a skillet. Add ham and saute for 1 minute. Add peas and mint (and green garlic) amd toss to combine. Cook until heated through, about 1 1/2 minutes. Season with salt and pepper and serve immediately.

What worked: Tasty and a good, different way to use snap peas. The mint added a nice tone without overpowering, as did the green garlic. It was quite pretty.

What didn't: The green garlic was a bit underdone and should have been added with the ham.

Will I make it again? I won't go out of my way to do so, but I'd make it again as we get snap peas in our CSA box.
