This week's Resolution Recipe: Baked Pancake.

3 eggses
1/2 cup milk
1/2 cup flour
pinch salt
2 Tbsp unsalted butter, melted

Heat oven to 450. Whisk eggses with milk until light and well blended. Whisk in flour and salt to incorporate. Blend in melted butter and whisk until smooth.

Pour the batter into two lightly greased 6" cake pans. Bake for 15 minutes without opening the oven door. The batter will rise up the sides of the pans like giant open popovers. Turn out and serve hot with lemon zest and powdered sugar.

What worked: Yum. We had them with aforementioned zest and a chopped up peach. We used to have something similar at Ken's House of Buttcheeks when we lived in Mountain View.

What didn't: I don't own any 6" cake pans. Mine are 9" and so the pancake was a bit thinner/crustier than the recipe intended, but it still worked okay.

Will I make it again? Sure.

I've never heard of Dutch Babies. I had a similar recipe to this growing up, but it was under a different ethnicity.

20 years ago there was a local 24-hour restaurant in Mountain View called "Ken's House of Pancakes". It was one of the few late night dining options in the town.

For reasons that shall remain obscure, our high school drama crowd always called it KHOB.

I make a version of these all the time. We call them Dutch Pancakes (probably because they may have used Dutch Ovens originally...)

Started making them when I was about 7 or 8 and my mother was tired of my whining about breakfast.

This is B's version of them, made most frequently during strawberry season, when he likes making them in small dishes and filling the bowl shape they rise into with mashed berries & lemon juice.

Peters Cafe (http://www.yelp.com/biz/peters-cafe-millbrae-2) sells Dutch Babies - these do sound similar, as other commenters have stated.
