Mar. 21st, 2011 05:45 pmThis week's Resolution Recipe: Mexi-Cali. Er, Mexican-style Cauliflower.
1 head cauliflower, separated into flowerets
1 1/2 cups tomato sauce (we used salsa)
2 Tbsp chopped parsley
1/8 tsp cloves
1/4 tsp cinnamon
1 Tbsp capers
2 Tbsp chopped olives
3 Tbsp grated cheese
2 Tbsp bread crumbs
1 Tbsp olive oil
Heat oven to 425. Cook the flowerets in a small amount of boiling salted water until barely tender. Drain. Mix the tomato, parsley, spices, capers, and olives. Pour a little of the sauce into a baking dish, add cauliflower, and cover with remainder. Sprinkle with the cheese, crumbs, and oil and bake until brown.
What worked: Surprisingly good. Not great, but better then "meh".
What didn't: It was uninspiring.
Will I make it again? I might, I guess. It's something different to do with cauliflower.
