This week's Resolution Recipe: Arugula-Nectarine-Blueberry Salad
3 nectarines: 2 sliced, 1 chopped
1 shallot, minced
sherry vinegar (I used a combination of white and dark balsamic)
olive oil
large handful toasted, unsalted almonds, coarsely chopped
1 pint blueberries
1 bunch arugula
Process the chopped nectarine into a puree. Remove to a bowl and whisk in the shallot, vinegar, and olive oil. Season with a little salt and adjust to taste.
Toss the sliced nectarines and blueberries with half the nectarine dressing and season with pepper. Toss the arugula with half the remaining dressing and put into a serving dish. Top with the fruit and finish with the almonds. Serve the remaining dressing on the side.
What worked: Easy, and a glorious cool summer salad. The pepperiness of the arugula contrasted nicely with the sweet fruit and the vinegar tang.
What didn't: One pint of blueberries was too much - we only needed a half pint. I'd probably substitute in pre-slivered almonds, but all I had were whole ones.
Will I make it again? Sure, in season.Arugula.
