This week's Resolution Recipe: See the title.
1 1/2 cups flour
1/2 cup cocoa powder (I used half regular and half black cocoa)
1/2 tsp baking soda
1/4 tsp salt
1/2 cup sugar
1/2 cup brown sugar
1/2 cup butter, softened
1/4 cup peanut butter
1 tsp vanilla (I doubled it, as I generally do)
1 large egg
2 Tbsp water
9 ounces peanut butter chips
Heat the oven to 375. Lightly grease two baking sheets. Whisk together the flour, cocoa, baking soda, and salt. In another mixing bowl, beat together the sugars, butter, and peanut butter until light and fluffy. Beat in the vanilla, egg, and water, then stir in the dry mixture, blending well. Stir in the peanut butter chips.
Scoop rounded Tbspfuls of dough onto the baking sheets. Flatten lightly to 1/2" thick. Bake for 7-10 minutes, until they're set and you can smell chocolate. Remove from the oven and cool on a rack.
What worked: Very nice - like a decent chocolate/peanut butter ice cream. But in cookie form. Nice soft texture; usually my cookies are on the crunchier side (which I like).
What didn't: I should have let them set on the baking sheets for 5 minutes before removing them to a rack. They smooshed a bit and a couple broke up (which we had to destroy the evidence, of course).
Will I make them again? I'm not saying no, but I don't make cookies very often.
