We came home from the event to find a small, dead rat in our pit. Annoying but not a huge deal.
However, the wife discovered a gnawed hole on the top of my charcuterie canvas suit bag - which is in the oubliette, just off the pit. The house has slumped enough that the door doesn't fit and there's a good-sized hole underneath. Enough, say, for a rat to run through where it can smell tasty aging meat and cheese. And want to go after them.

No signs that it got into the meat (thank $deity). But we've removed the chorizo a week early and other sausage projects are (waaah!) on hold while we figure out how to rat-proof the oubliette. If we want to continue using it to age meat and cheese, poison is right out.

I think you're sending a message for me to not eat your meat, but instead I would suggest that you fire all of your cats.

Rats don't chew through metal. I'd suggest a metal plate be attached to the bottom of the door so the hole is covered.
