Last week's Resolution Recipe comes from the surprise birthday party
etaine_pommier threw me: Garlic-Stuffed Mushrooms.
2 heads garlic, peeled and separated
1 cup heavy whipping cream
1 tsp salt
1 cup panko bread crumbs
24 large button or cremini mushrooms, stems removed
2 tsp olive oil
1/4 tsp ground black pepper
In a small saucepan over low heat, slowly cook garlic and cream for about 45 minutes, until the garlic is soft enough to mash with a spoon. Remove from heat and mash garlic into the cream, making a rough paste. Stir in salt and bread crumbs, mixing thoroughly.
Heat oven to 450. Set mushroom caps top-sides down on an oiled baking sheet. Brush edges of caps with oil and fill centers with garlic cream mixture. Brake until starting to brown, about 15 minutes. Remove and let stand for five minutes. Arrange on a platter and sprinkle with pepper.
What worked: Oh man, these were tasty.
What didn't: I let them sit a bit too long and they would have been better warmer.
Will I make it again? Not soon, as it's not the healthiest vegetable dish - but as an appetizer for a party, oh yes.
