This week's Resolution Recipe: Cream of Broccoli Soup.
2 lbs broccoli
1 Tbsp butter
1/2 cup yellow onion, chopped
(I added: garlic. It called for zero and I used... more.)
1/4 cup chopped green bell pepper (The wife does not care for it)
2 Tbsp flour
6 cups stock (I used less stock and no flour)
1 bay leaf
parsley
1 tsp thyme
6 peppercorns
pinch nutmeg
3 egg yolks
1 cup cream (I used half and half)
Chop the broccoli and saute in butter with onion and garlicand bell pepper. Sprinkle with the flour and stir. Add to the stock, along with bay leaf, parsley, thyme, and pepper. Cook for 30 minutes and puree. Add the nutmeg, strain the soup from the pulp, and return to the pan. Add the egg yolk mixture and pour into hot soup.
What worked: Pretty tasty. Not as healthy as steamed broccoli, but it used up a lot we had sitting in the fridge.
What didn't: It could have used more garlic. (Shocker!) I didn't strain the soup, and there were some small fibrous inedible bits remaining in it.
Will I make it again? Meh. I actually like steamed broccoli, or broccoli/beef stir-fry. This used up the three heads left from our CSA box, so maybe next time we have tons. I probably won't seek it out though.
