Oct. 16th, 2012 05:28 pmThis week's Resolution Recipe: Toasted Cheese Sandwiches with Pesto and Tomatoes.
sourdough bread
mayonnaise
pesto (I used house-made)
sharp, quality cheddar, thinly sliced
red onion, thinly sliced
tomatoes, thickly sliced
butter
Spread mayonnaise on one side of the bread and pesto on the other. Layer the cheese, onion, and tomatoes on the pesto'd slice. Top with the other half. Heat a heavy skillet and add a tablespoon of butter. Put the sandwich on top of the melted butter and cover with a lid. Lower the heat to medium-low, toasting until deeply golden brown. Uncover, add another tablespoon of butter, flip to the other side, and cover again. Toast deeply golden brown again. Check to make sure the cheese has melted all the way and serve while warm.
What worked: A glorious summer sandwich. I don't usually put mayonnaise on my sandwiches but it was a decent lubricant here.
What didn't: I didn't use enough pesto. I think it should be a fairly thick layer.
Will I make it again? It's lunch tomorrow.
