6 oz bittersweet chocolate
3 eggses
1/3 cup sugar
6 Tbsp flour
1 1/2 c cream
1/4 tsp salt
2 Tbsp Calvados
3 apples, peeled and sliced
Heat oven to 375. Butter a 10" round baking dish. Melt the chocolate over a double boiler and cool slightly. Beat the eggses and sugar with a mixer on medium until light and fluffy. Lower speed and add flour, cream, salt, brandy, and chocolate. Set aside for 10 minutes.
Arrange apple slices in the dish. Pour the batter over the apples and bake until top is golden (How could it ever be golden? It's chocolate!) and custard is firm, 35 minutes. Serve immediately.
What worked: It was fine. Much better the next day, when it had absorbed apple moisture and become fudgey.
What didn't: It scrambled slightly when taking it out. And it wasn't mouthgasmingly spectacular, just fine.
Will I make it again? Meh. If I do, I'll make it the day before.
