This week's Resolution Recipe: Green Onion Pancake.

2 cups white flour
1/2 cup boiling water
1/3 cup cold water
1 Tbsp sesame oil
1 tsp salt
1/2 cup minced green onions
vegetable oil spray

Mix together flour and boiling water. Add 1/3 cup cold water and knead until dough is smooth and elastic. Add more water if necessary. Cover and let dough rest for about 15 minutes. In a small bowl, combine sesame oil, salt, and green onions. Set aside.

Divide dough into 10 equal pieces. Flatten each in the palm of your hand. Then roll each out into a 6" circle. Spread each piece with the green onion mixture. Roll each piece into a jellyroll. Then wind each up into a snail shape. Flatten slightly; roll on lightly floured surface to a 5" circle.

Heat a pan over medium-high heat and spray with veg oil. Fry pancake until golden brown, about 2 minutes; turn and cook other side. Serve hot.

What worked: Yummy. They dressed up a simple stir-fry nicely, more than I expected.

What didn't: I had to spend a bit of time parsing out what the rolling directions meant. There simultaneously weren't enough green onions, and a bit too much in that they splooshed out during the rolling process. I found them a tad salty (but the wife didn't). They didn't golden brown so much as darken in spots, since the texture wasn't completely even and flat. I probably need to use more actual oil rather than spray in the pan.

Will I make it again? Probably. They were nicer than their effort indicated as a side-dish to a stir-fry.

I parsed as:
1) Take each 10" circle and roll up from one end to another into a cylinder, creating a spiral shape when viewed from one side.
2) Take this roll and wind it about itself into a circle, creating another spiral shape when viewed from the top. (Snail shell shape)

Paratha seem to have similar rolling instructions, but no scallions. I like char siu bao quite a bit, and bypass the assorted shrimp choices. If I want a drive, there's a bun-focused Chinese bakery about half an hour away.
