This week's Resolution Recipe: Fronch Toast.
I enjoy Fronch Toast, but I rarely make it. Partly because it usually doesn't turn out as well as it should - custardy, eggy, yet crisp enough to resist a fork. This recipe was pretty good though.
2 eggses
1/2 cup milk (I used buttermilk)
pinch salt
1 tsp vanilla
dash cinnamon
4-6 slices stale bread (I used brioche)
Beat the eggses, milk, salt, and vanilla (and cinnamon) until light. Lightly soak the bread and place on a lightly greased, moderately hot griddle. Cook until brown, then flip and repeat. Serve with butter and syrup.
What worked: It was good, especially with fresh strawberries. There wasn't too much egg mixture left over and the lightness of the brioche meant that it absorbed nicely without sogging.
What didn't: I was reasonably happy with it.
Will I make it again? On occasion. I generally prefer pancakes or waffles though.
