So Farro Way From Me

This week's Resolution Recipe: Farro-Maple Syrup Pudding.
1 c farro
2 c whole milk
2/3 c cream (I used 2 2/3 c 1/2 & 1/2)
4 tsp butter unsalted butter, melted
1/4 c maple syrup
1/6 tsp salt
2 large eggses, beaten
1/6 c dark brown sugar
Rinse the farro in a fine sieve under cool running water. Transfer the farro to a bowl, cover with two inches of water, cover with plastic wrap, and refrigerate overnight.
Heat oven to 275. Drain farro and set aside.
Mix together the milk, cream, melted butter, maple syrup, salt, and eggses. Add the drained farro, mixing well. Pour into a greased 1 to 1.5 quart shallow casserole dish, and bake on the middle level for 30 minutes. Stir the mixture and sprinkle the top with the brown sugar. Raise the oven heat to 300 and bake for 30-40 minutes, until set.
Can be served hot, warm, or cold.
What worked: It was okay. The whipped creme fraiche added a nice bite. I think it would be better as a sweet brunch item.
What didn't: The farro separated and sank, so you had a layer of farro and a layer of custard. I suppose a much bigger and shallower casserole dish would prevent that (I used an 8" Pyrex) but a shallow, 12-14" casserole dish seems singularly unuseful for most other circumstances.
Will I make it again? The curvy upstairs neighbor's comment was "If you need a way to get whole grains and don't care about the calories, this might be a good delivery mechanism."
