This week's Resolution Recipe: Washoe Valley Duck Egg Pancakes.

1.5 cups flour
3.5 tsp baking powder
1 Tbsp sugar
1.25 cups milk (I used buttermilk)
1 duck egg
1 Tbsp vanilla bean paste (I used 1.5 tsp vanilla extract - normally I double the vanilla as a matter of course, but.)
1/4 cup melted butter, cooled slightly

Combine all dry ingredients. In a separate bowl, whisk together the milk, egg, and vanilla. Combine into the dry and gently mix. Pour in the cooled melted butter until incorporated, being careful not to over-mix. Let sit 10 minutes before cooking.

What worked: These were excellent diner-style pancakes. Quite filling, more than we expected; we made a double batch and couldn't finish them.

What didn't: The batter was quite thick and the pancakes expanded substantially during cooking. I tried to glorp ladlefuls onto a griddle, but they merged. After the first batch I went to a large skillet instead.

They weren't pretty, uniformly round pancakes. They were a bit... rustic in appearance.

Will I make it again? This will probably be our default pancake, yes. Knowing the glorping issue I might try it with very small silver dollar size.
