As experiments go, making a Chickpea Niçoise Salad (with chickpeas replacing both the potatoes and tuna) was a reasonable success.

No, it was a straightforward Salade Niçoise - lettuce, roasted peppers, hard-boiled egg, haricots verts, Niçoise olives, and a Dijon vinaigrette. I just replaced the steamed potatoes and tuna with a can of chickpeas.

Dead easy. A normal Niçoise is part of the usual rotation for that reason.
