Cod Pieces

This week's Resolution Recipe: Cod/Corn Chowder.
1 tsp oil
2 slices bacon, 1" pieces (I used house-made)
1 small onion, chopped
no garlic (Ha! I used... more.)
2 stalks celery, diced
1 red bell pepper, diced
3 Tbsp flour
3 cups broth (I used house-made)
1 1/2 cups milk
pinch salt and pepper
pinch thyme
1 lb cod, chopped
2 cups corn kernels
Heat the oil in a large saucepan. Cook the bacon, stirring occasionally, until browned - about 6 minutes. Remove bacon. Add the onion, garlic, celery, and bell pepper. Cook about 5 minutes until softened. Sprinkle in the flour and stir for 30 seconds. Stir in the broth, milk, and spices; bring to a simmer. Reduce heat to medium-low and simmer 15 minutes to blend flavors.
Add fish, bacon, and corn. Cook about 5 minutes until the cod is opaque. Ladle into soup bowls, sprinkle with parsley, and serve hot.
What worked: It was okay. It needed a dash of Tabasco.
What didn't: We only had 1/2 cod, but fortunately we also had 1/2 lb "seafood blend" - scallop, squid, and shrimp pieces. We only had about 1 cup corn.
It was fine, but I wasn't enthused. Using milk and flour does not fool my palate as a substitute for half-and-half or cream.
Will I make it again? The wife liked it, so probably.
