This week's Bonus Resolution Recipe: Sourdough Crepe Pancakes.

2 eggses
1/2 cup sourdough starter
1 1/2 cups milk
pinch salt
1/4 cup sugar
1/4 tsp vanilla
2 cups white flour
6 Tbsp butter, melted

Heat a large skillet on medium heat. Beat the eggses and whisk in everything but the butter; some lumps are okay. Add in the butter and beat until smooth. Cook 1/4 cup batter at a time, rolling out the batter in a circular motion to produce a thin crepe. Cook for 2-3 minutes and flip; cook 2-3 minutes more.

What worked: Tasty; similar to the Duck Eggses Pancakes we sometimes make. They went very well with maple syrup and fresh strawberries. I made the batter overnight to give more sour flavor.

What didn't: The batter was pretty thick, so even rolling the skillet didn't thin out the pancake. It didn't crepe at all. This meant that the pancake stayed thick, so the inside was often still a bit gooey when the outside was threatening to darken to black.

Will I make it again? I'll probably just make the duck egg version.
