This week's Resolution Recipe: Caramel Banana Walnut Muffins.
We made this recipe primarily because the wife found it in a catalogue, and we already had all the ingredients. (Well, almost all as it turned out.)

8 Tbsp unsalted butter, room temperature
2/3 cup light brown sugar (I only ever use dark. Otherwise, what's the point of using brown sugar at all?)
1 cup mashed banana, about 2 medium or 1.5 large - 227 g
1 large egg
1 tsp vanilla (Ha! I used... more.)
1/3 cup milk
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup white flour
1 cup white wheat flour (I used whole wheat pastry flour)
3/4 cup caramel chips
1 cup chopped toasted walnuts

Heat the oven to 350. Lightly grease a 12-cup muffin tin. Beat together the butter and sugar until smooth. Mix in the mashed banana, then the egg, vanilla, and milk. Mix together the dry ingredients and mix in until smooth. Stir in the caramel chips and walnuts. Scoop the batter into the tin, mounding each muffin slightly.

Bake the muffins for 20-23 minutes, until they pass the toothpick test. Remove from the oven and tilt the muffins in the pan to prevent from steaming as they cool. After 5 minutes, transfer to a rack to cool completely.

What worked: They were fine, like banana bread without spice and a hint of caramel. We ate them gradually as afternoon tea; they were a bit rich for a breakfast.

What didn't: They weren't that exciting. Banana bread has spice in it for a reason. A sprinkle of powder douce over the top helped but not as much as having cinnamon and others in the batter would have.
We only had about 2/3 cup of walnuts, so I made up the difference with pecans. 100% walnuts would be better.

Will I make it again? Nah.

Wait, what? Banana bread with spice? My family recipe for banana bread doesn't have any spice in it, nor do I ever remember tasting any with spices in it. I am having problems imaginaning what spices would even taste ok with banana...
