Mar. 6th, 2022 09:41 amThis week's Resolution Recipe: Banana Oatmeal Cookies.
1 1/2 cups flour (180 g)
1 1/2 tsp cinnamon
1 tsp baking soda
1/2 tsp salt
1/4 tsp nutmeg
1/2 cup unsalted butter, softened
3/4 cuplight dark brown sugar
1/2 cup white sugar
1 egg
2 tsp vanilla (Ha! I used... more.)
1 cup mashed bananas, about 2 large
3 1/2 cups old-fashioned oats
1 cup chocolate chips
Heat the oven to 350. Like a baking sheet with parchment or silicone. Whisk together the flour, cinnamon, baking soda, salt, and nutmeg. Cream the butter with a mixer on medium until creamy. Add the sugars and beat until combined, about 2 minutes. Add the egg and vanilla and beat until fluffy, about 2 minutes. Scrape the bowl and beat in the banana. Add the flour mixture and beat on low until just incorporated. Mix in the oats and chocolate chips.
Scoop the dough into 2 Tbsp-size mounds onto the lined baking sheet, spacing the cookies about 2" apart. Bake for 12-15 minutes; golden around the edges and the centers appear dry. Let the cookies cool on the pan for a few minutes, then transfer to a wire rack to cool completely.
What worked: The wife wanted these as we had all the ingredients (including two overripe bananas). They were okay.
What didn't: Meh. I'm not sure they are worth the effort. Due to the oats and banana replacing some of the butter, sugar, and flour, they are apparently lower-calorie than a standard oatmeal-choc chip cookie. I'd rather eat one good cookie than two meh ones, though. At least they weren't oatmeal-raisin cookies, which are the inverse poop moth of cookies.*
Will I make it again? Nah. I'd rather make banana bread, or a perfect chocolate chip cookie.
* Poop moths imitate something unappealing to avoid being eaten. Oatmeal raisin cookies imitate something you might want to eat - an oatmeal chocolate chip cookie - and are unappealing once you have been fooled into eating them.
