This week's Resolution Recipe: Tomato Salad with Fennel Dressing.
This was part of a homeowners' meeting dinner made of Resolution Recipes: Italian sausages with kale served in pretzel buns, this salad, and panna cotta for dessert.
1 white Bermuda onion, sliced thin
5 ripe tomatoes, sliced
1/4 cup parsley, chopped
1 Tbsp oregano
Dressing (this makes 3-4x more than needed):
1/4 cup olive oil
1/4 cup veg oil
1/4 cup red wine vinegar
1/4 cup white wine vinegar
1/2 tsp sugar
1 1/2 tsp dry mustard
1/2 tsp fennel seed, ground
1 Tbsp lemon juice
salt and pepper to taste
Mix everything together. Let this marinate for a few hours before dinner, and then be ready to be sorry you did not make more.
What worked: It was fine. The wife liked it quite a bit; I thought it was okay. We will gradually use up the rest of the dressing on other salads.
What didn't: The tomatoes and onions wept quite a bit as you might expect over a couple hours, so the bottom two inches-plus of the salad bowl were covered in liquid. The dressing was nondescript.
Will I make it again? If the wife wants it. I personally don't find it worthwhile. Not bad or too much work, just meh.
