This week's Resolution Recipe: Eggses in Tomato Curry.

3 Tbsp veg oil
2 red chilies, sliced
1” ginger, minced
3+ cloves garlic (Ha! I used... more.)
1 tsp coriander
½ tsp turmeric
1 pint cherry tomatoes
2 Tbsp cream
2 eggses
basil
2 pieces flatbread

Warm oil in a skillet over medium heat. Add chilies, ginger, and garlic and cook for 2 minutes. Add spices and stir in. Drop tomatoes into pan, season with a bit of salt, and cook for 12-15 minutes, stirring and squashing tomatoes so they release their juices and thicken. Stir in the cream and transfer to two small skillets.

Make a nest in each skillet, crack an egg in, and cover. Cook 3-4 minutes until the whites are set but yolks are runny. Remove from heat, top with basil, and serve in the skillet with flatbread to sop up.

What worked: This was an excellent weekend breakfast. It's like an alternate shakshuka and we enjoy that type of meal.

Dirtying an extra skillet is more dishes, but transferring to the two small skillets meant that we could each eat from the skillet as intended. (This is one reason we have two small skillets.)

What didn't: It could have used a bit more heat, especially with the cream to cut it. The chilies I sliced in are on the older side and might have lost many of their seeds into the bag.
I forgot to make the nests in the tomato sauce; the eggses floated on top, so they didn't cook quite as thoroughly as they should have.

Will I make it again? Sure.
