This week's Resolution Recipe: Albondigas.

1 cup canned diced tomatoes
1 oz chipotle chiles
14 oz ground pork
1 egg
1 large onion, chopped
2 cloves garlic, chopped (Ha! I used... more.)
1 bunch cilantro, chopped
salt and pepper

Heat the oven to 325ยบ. In a fud processor, blend together the tomatoes and chipotle chile. Pour into a large saucepan over medium heat and let simmer.

Place all the other ingredients into a mixing bowl and combine well. Roll the mixture in the palm of your hands to make 16 meatballs. Place on a baking pan and bake in the oven for 20 minutes.

Remove the meatballs from the oven and add them to the simmering sauce. Cook for a further 45 minutes, seasoning with salt and pepper to taste. Serve with the sauce, a wedge of lime, and your accompaniment of choice. (We had fresh tortillas and black beans.)

What worked: It was okay. When I was growing up my mother would make "Mexican meatballs", which were small meatballs simmered in tomato sauce and served over corn chips. This totally reminded me of that, although the quality was higher.

What didn't: Not that interesting.

Will I make it again? Doubtful.
