This week's Resolution Recipe: Spiced Lentils.

1 cup dried lentils (I used a mixture of yellow and pinkish)
2 1/4 cups veg broth, divided (I used house-made chicken stock)
2 cups water
1 Tbsp olive oil
3 cloves garlic, minced (Ha! I used... more.)
1/2 cup tomato sauce (I used ~1/4 cup house-made tomato paste)
1 Tbsp lemon juice
1/4 tsp salt and pepper to taste
1/8 tsp ginger
1/4 tsp cumin
1/4 tsp turmeric
1/4 tsp smoked paprika
1/2 tsp garam masala
2 Tbsp cilantro, chopped, for garnish

Place lentils in a medium-sized pot, with 2 cups veg broth and 2 cups water. Bring to a boil, cover, and simmer 20 minutes over low heat until lentils are just tender. Drain any excess water off.

Heat oil in a skillet and briefly saute the garlic for 1 minute, until fragrant. Tip the garlic into the lentils and mix in the remaining veg broth, tomato sauce, and spices. Garnish with cilantro and serve.

What worked: It was better than I expected. I liked it reasonably well as a side dish.

What didn't: The yellow lentils were still a bit crunchy. Having less liquid with tomato paste probably contributed.

Will I make it again? I wouldn't say no, but I probably won't bother.
