This week's Resolution Recipe: Tarragon Chicken.
"Pairing chicken with tarragon and garlic is a classic that never gets old."
1 lb butternut squash, cut into 1" cubes
1 tsp honey
3 Tbsp olive oil, divided, plus more for drizzling
pinch red pepper flakes
1 1/2 tsp salt
2 large onions, sliced (about 4 cups)
1/2 tsp pepper
3 Tbsp chopped fresh tarragon, or 1 tsp dried
2 cloves garlic (Ha! I used... much more.)
2 lbs bone-in, skin-on chicken drumsticks and thighs
sherry vinegar, to taste
Heat the oven to 425°. In a large bowl, toss the squash with the honey, 1 Tbsp oil, red pepper flakes, and a pinch of salt. Arrange the squash on one side of arimmed sheet pan 9x13 pan. Spread out the onions on the other side. Drizzle the onions and squash with a little oil and sprinkle with salt and pepper, tossing to coat. Roast for 15 minutes.
Meanwhile, in the same bowl you used for the squash (you don't need to wash it first) stir together the tarragon, garlic, remaining 2 tsp oil, 1 1/2 tsp salt, and 1/2 tsp pepper. Add the chicken and toss to coat.
After the onions and squash have roasted from 15 minutes, toss them well. Add the chicken to the pan, nestling the pieces in with the vegetables, and roast until the chicken is cooked through and the onions are tender - 30-45 minutes. Place the chicken on a platter and drizzle with sherry vinegar. Spoon the veg and juices around the chicken and serve.
What worked: We liked it, and it was easy. Lots of juices; I would serve this over rice to take advantage.
What didn't: I should have used fresh tarragon as the dried was not that noticeable. I used a mixture of chicken thighs and drumsticks, but I would go with straight thighs in the future. (More meat for the bone hassle.) I'd probably get pre-cubed squash next time.
This is the second recipe from this one-pan cookbook we've tried and both were good; if this continues with the next couple testers I copied, I might be tempted to pick up the cookbook for our shelf. But we really don't need more cookbooks.
Will I make it again? Yes, this will go into the rotation.
