Oct. 17th, 2023 11:24 amThis week's Resolution Recipe: Roasted Salmon Salad.
1 lime
1 small fresh chile, thinly sliced
2 Tbsp thinly sliced red onion or shallot, divided
3/4 Tbsp 2 1/4 tsp fish sauce
pinch salt and sugar
2 Tbsp olive oil
10 oz salmon filet
4 cups salad greens
1/2 cup mixed soft fresh herbs such as cilantro, mint, and basil
1/2 cup thinly sliced radishes or cucumbers, or both (I used both)
Heat the oven to 350°. Squeeze the juice from half a lime into a small bowl; add the chile, half of the sliced onion, the fish sauce, and a pinch each salt and sugar. Let sit for 1 minute to dissolve the salt, then whisk in the oil. It won't emulsify, so mix it up again before using. Set aside.
Place the salmon into a shallow baking dish, sprinkle very lightly with salt, and drizzle generously with oil. Add the remaining lime half surrounding the salmon. Roast until the fish is just cooked to taste, 10-20 minutes depending on thickness. Transfer it to a plate and let cool slightly, then cut into large chunks. Drizzle some of the dressing over it.
Put the salad greens, remaining onion, herbs, and radishes/cucumber into a large bowl and add a little bit of the dressing. Squeeze some of the juice from the roasted lime over it and drizzle with a little oil. Toss and add the salmon, drizzling with the remaining dressing.
What worked: Eh. It wasn't a failure.
What didn't: The wife picked out this recipe for dinner and I didn't think about it being so similar to this recipe that we had just done. This version was 1) not as good; 2) way too similar to a recent dinner so I was predisposed to not be satisfied.
Continued ranting about fractions of a tablespoon not being a standard, useful measurement.
Will I make it again? No, I'll make the other version. Without using fractions of a tablespoon.
