This week's Resolution Recipe: Garlic Noodles with Mushrooms.
"This recipe takes the beautiful simplicity of San Francisco-style garlic noodles and marries it withribbons of summer squash mushrooms, a little cilantro, and Parmesan."
1 lb fresh egg noodles
salt
12 oz summer squash
1 lb mixed mushrooms (We used pioppini and maitake)
6 Tbsp unsalted butter, in chunks
15 cloves garlic (Ha! I used... actually about that much.)
1 Tbsp fish sauce
1 Tbsp soy sauce
1/2 tsp black pepper
1/2 cup grated Parmesan
chopped cilantro, for serving
Bring a ginormous pot of water to boil and season generously with salt. Cook noodles until al dente. Drain noodles, saving 3/4 cup water, and rinse lightly with water so they keep from sticking to each other. Set aside.
Heat another large pot over medium heat. Add the butter, and once melted, add the garlic and mushrooms. Stir and cook about 2 minutes. Stir in the fish sauce, soy sauce, pepper, 1/4 cup of the Parmesan, and 1/2 cup reserved water. Stir to combine. Add the sauce to the noodles; toss very well and stir in the remaining 1/4 cup water if you need more sauce. Stir in the cilantro and serve.
What worked: This was quite good. Nice funk undertone of umami from the fish and soy sauces.
What didn't: Honestly, it could have used more garlic. The recipe says "serves 4" but 6-8 seems more accurate, at least at the portion sizes we use. I might add some green onion in with the cilantro.
Will I make it again? Yes, this will go into the rotation.
