"A sort of savory peaches and cream."
3 yellow nectarines, diced
2 small cucumbers, diced
1/2 red onion, diced
1/2 red Thai chile, stemmed, seeded, and minced
small handful mint, finely chopped
1/4 cup olive oil
1/4 cup orange juice
2 Tbsp lemon juice
1 tsp whole-grain mustard
1 Tbsp maple syrup
pinch salt and pepper
8 oz burrata
Gently toss nectarines, cucumbers, onion, chile, and mint in a salad bowl. In a small bowl, combine oil, juices, mustard, syrup, salt, and pepper. Whisk vigorously to combine. Pour half the dressing onto the chopped salad and gently toss to coat. Place the burrata on top of the salad in the center. Just before serving, pour the remaining dressing over the burrata.
What worked: It was a summery recipe as promised.
What didn't: Too much dressing (by about half). Not that interesting, despite quality ingredients.
Will I make it again? I don't think so.
